The Most Amazing Noodle Dish (and chicken)

Let’s start off by saying this is amazing, my household destroys this dish every time I make it. I use a homemade noodle recipe from Spruce Eats, but a box noodle would be perfectly fine too. As always, my dinners have to have meat in them (my husband despises meatless meals lol). This is a dish that you could omit the meat in it completely and have such a flavor packed dinner.

I don’t want to waste your time so let’s dive on in!!

My recipe makes a decent amount, easily feeds 4. I usually times it by half so I can make enough for lunches in the week.

Ingredients:

1/4 c soy sauce

1/4 c sweet chili sauce

1/2 c pear juice (this is approximate, I use the juice out of a can of pears, peaches works just as well too!) if I end up with less, I’ll add some water.

3 cloves garlic, minced

1/2 c chopped red onion

1 T lime juice
red pepper flakes (totally optional)

1 pound noodles, cooked as directed.

1 chicken breast, cut into chunks

Avacado oil (or any other high heat oil)

pepper to taste

Heat oil in skillet, I use just enough to coat my pan. Add the chicken breast and saute until almost done. Add the onions and garlic and cook a few minutes until fragrant. Add soy sauce, chili sauce, pear juice, lime juice, bring to a bubble then reduce heat and let simmer until it begins to thicken. When your noodles are almost done cooking, strain them and add right into the skillet with everything else, toss until all noodles are covered in sauce. Serve.

You will not regret this dish!!! It’s so good. I am currently devouring some while I type this. LOL
