Citrus Chicken Bake w/ side

Ahhhhh. I have been MIA for awhile now and I’m sorry!!! Things got crazy busy and this was something that had to be put on hold for a bit, but I am back! With an amazinggggg dinner to share with you (including a side) 😉
I don’t have exact measurements for y’all (oooops!) so bare with me!!

Citrus Chicken
16 pieces of Chicken thighs and/or drumsticks (you DON’T have to use that many!)
Olive oil
1 large orange
1/4 bottle lime juice
Paprika
Lemon Pepper season
Garlic powder
Italian Season
1/2 large onion

Throw the chicken around in some olive oil, put in a big baking dish. Slice up the orange and onion and put over the chicken. Sprinkle the lime juice over the chicken and season generously.  Bake at 425 degrees for 1 hour and 25 minutes. The chicken is so tender it practically falls off the bone.

Balsamic Potatoes and Mushrooms
4 large potatoes, chopped into bite sized pieces
6 mushrooms, quartered
4 parsley sprigs, chopped
2 T Olive oil
1T balsamic vinegar

Add everything to a small casserole dish.  Cook covered for 25 minutes at 425 degrees.
