Green Chile Stuffed Chicken Breast

Chicken is healthy for you so we always have chicken, but, sometimes you really have to get it spruced up so you don’t get tired of it. This time I tried a different “stuffing” for the chicken breast and it turned out AMAZING, I could literally make the stuffing and eat it with crackers! (:
4 large chicken breasts, sliced in half (making like a pocket for the stuffing)
8 ounces Cream Cheese, softened
1 small can diced Green Chiles
1/4  cup chopped onion
2 stalks celery, sliced fine
2 cloves garlic, minced
Generous amounts of the following seasonings: paprika, Italian, pepper, Chili powder, Cumin, and Ginger.
4 thick slices Pepper jack Cheese
4 thick slices Monterey Jack Cheese

Preheat oven to 375 degrees. Mix in a bowl: cream cheese, celery, onion, green chiles, garlic until well combined. Divide the mixture among the four chicken breasts. In a separate bowl, combine all seasonings. Coat the chicken then in the seasoning mix.  Place chicken in an oven-safe dish and cover with foil, then put in  oven and bake approximately 1 hour (or until juices run clear and internal temperature reaches 165 degrees).  Remove foil and top each breast with 1 slice of each cheese. bake an additional 10-15 minutes.
