Cheesy Garlic Scalloped Potatoes

Another one of those “let’s wing it!” recipes I concocted last night…

4-6 potatoes, sliced (it all depends on the size…the batch I had were medium-ish so I used 6)
4 Tablespoons butter
4 Tablespoons flour
2 cups 1% milk (any should be fine, this is just what I used)
1 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon pepper
8oz cheddar cheese, cubed or shredded + extra to put on top

Melt butter in small sauce pan and stir in flour.  Once bubbly, add milk and add the 8 ounces of cheese. When cheese is melted add in seasonings.  Layer 1/2 the potatoes on the bottom of a casserole dish (8×8 works just fine), pour 1/2 cheese sauce over, layer with remaining potatoes, pour remaining cheese sauce.  Top with more shredded cheese.  Bake at 350 degrees for 1 hour.
