Everyone loves cheesy goodness, so why not add it to your pasta?! Well, it was more like I needed to go grocery shopping, but didn’t want to so I threw something together!
What ya need:
chile lime rub
red pepper flakes
This recipe was completely thrown together because after taking dogs on walks, cleaning out chicken coops, playing with kids, and cleaning my house I did not even want to cook dinner! But, I had taken chicken out of the freezer so I had to make something!
I used half a box of large shell pasta (seriously?!) and cooked them according to the box. In a skillet, cook chicken in garlic powder, chile lime rub, italian seasoning, pepper, cumin, red pepper flakes (just eye ball it depending on how much you are making, I smothered my chicken in seasonings). In a saucepan, melt butter and mix in flour. Once incorporated, add the milk. When it begins to boil mix in the velveeta. Keep stirring and simmering until it becomes thick.
Preheat oven to 350 degrees
When noodles are done place them in an 8×8 pan, add chicken and pour cheese mixture over. Bake for 20 minutes, until cheese bubbles.
Easy, thrown together dinner for those nights where you need dinner, but don’t want to make a fancy meal. Plus, it uses all those half full boxes of noodles that are taking up space in your cupboard!!!
