Cookies, cookies, cookies

My son and I spent this rainy morning making some Snickerdoodles and Peanut Butter cookies.  You can see them in the making here  Snickerdoodle  and here PeanutButterCookie.

Snickerdoodle Recipe (without cream of tartar)

1 and 3/4 cup flour

1 teaspoon baking powder

1/8 teaspoon salt

1/2 cup butter, room temperature

1 cup sugar

1 egg

2 Tablespoons milk

1/2 teaspoon vanilla extract

Splash of vegetable oil

Mix together the dry ingredients, then cut in butter, add egg, milk, vanilla.  As its incorporating the butter, add just a splash of vegetable oil to really pull the ingredients into a nice dough.
Scoop dough (or roll into balls), onto cookie sheet. Sprinkle cinnamon and sugar mixture (1 Tablespoon sugar + 1 teaspoon cinnamon) over the cookies. Bake at 375 degrees for about 12 minutes.  Let rest on the pan for 3 minutes before moving them to a cooling rack.

Peanut Butter Cookie Recipe

1 cup sugar

1/2 cup brown sugar

1/4 cup butter, softened

1 and 1/4 cup flour

1/2 teaspoon baking powder

3/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup peanut butter

1/4 cup shortening

1 egg

Mix together all ingredients in order. Cover and refrigerate 2 hours.  Heat oven to 375 degrees.  Scoop or ball the dough on a cookie sheet, press with a fork a criss-cross pattern and sprinkle with a little sugar. Bake 10-12 minutes.  Let cool 5 minutes before removing off the cookie sheet.
