Mushroom Bacon Cheeseburger Bombs

A concoction of pure amazingness. Completely fattening, unhealthy, but it’s freaking AMAZING!  It’s the burger without the bun, the salad toppings…this is the no nonsense food. Mhmm. That fantastic 😉
That was my inner hunger monster talking.  She’s full of ‘tude.

Anyway, back to what you all stopped by for.  The recipe for the MUSHROOM BACON CHEESEBURGER BOMB! 

1 pound ground beef (80/20)
3 slices bread, put through a food processor
3 eggs
Generous amounts: seasoned salt, Italian seasoning, pepper, Red pepper flakes
2-3 mushrooms, sliced
6 chunks of cheddar cheese
1/3 onion, chunked
12 slices of bacon

Begin by mixing ground beef, bread crumbs, eggs and seasonings in a large bowl.  Grab a bit of the beef (depending on how big you want them), flattening it in your hand.  Add a chunk of cheese, a piece or two of onion, and two slices of mushrooms.  Cover/roll beef up into a ball.  Then wrap two pieces of bacon around it, securing with toothpicks.  Do this until you are out of beef/toppings.
Due to the heat wave Alaska has been having I cooked mine in a large skillet on the grill. Rotating the burger bombs multiple times to avoid burning and to cook bacon entirely.  No one likes soggy bacon.
Serve with all the toppings!
