Chicken Gravy from scratch!

So, in my house gravy packets do not exist because they are full of unnecessary sodium. Considering we like eating as healthy as we can (sometimes we splurge, we are only human!)  Anyhoo, I made a whole chicken in a crockpot (look it up, seriously best way to cook a chicken minus spatchcocked on a grill!) and plan on serving it with rice and veggies, but gravy was missing in the picture.  After seeing a million recipes on homemade chicken gravy I decided to just make my own version and it is seriously amazing!!!
First off, take 1/3 cup of butter and melt it in a saucepan, then add 1/3 cup of flour and mix it. While this is doing its thing, take the juices from the crockpot and pour in a measuring cup.  When the flour and butter are well combined, add the chicken juices. Add salt and pepper to taste.  Stir until thickened and well combined, then let simmer until ready to use.  Its that easy!
My crockpot chicken seasonings were: chili powder,garlic &sea salt, black pepper, fresh thyme and parsley and a bit of paprika. No liquid, the fat cooks off and gives you about 2 cups of juices when done.
