My house loves pancakes and waffles and I was tired of buying pre-made mixes every week or 2 because they are made all the dang time! So, I found a recipe years ago and tweaked it to make it the way I liked it, well to be more accurate, the way my kids like it! I make these at least once a week.
3/4 cup milk
2 Tablespoon vinegar
1 cup whole wheat (or all-purpose flour)
2 Tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
dash of salt
2 T melted butter (or vegetable oil)
1/2 teaspoon vanilla extract -optional
1/8 teaspoon almond extract -optional
1/4 teaspoon ground cinnamon -optional
In a measuring cup add the milk and vinegar (to sour), let rest while you make the rest of the batter. Combine all ingredients, after about 6 minutes mix in the sour milk.
Once ready begin cooking your pancakes or waffles! Enjoy! (:
