Cowboy Cabbage Rolls

1 pound ground beef
1/3 onion, chopped fine
1 celery stalk, chopped fine
Generous amounts: chili powder, garlic salt, pepper, coffee rub
1 cup cooked rice
6 cabbage leaves
1/2 cup ketchup
1/4 cup BBQ sauce
1/2 T Worcestershire sauce

In a large skillet, brown meat, add seasonings, celery and onion. Add the cooked rice and set aside.  Scoop the mixture into the cabbage leaves (divide mixture into the six leaves) then roll the leaves up.  Place in a casserole dish.

Mix ketchup, BBQ and Worcestershire sauce and drizzle over the cabbage rolls.  Cover dish with a lid or foil and bake at 375 degrees for 4o minutes.

I created this dish last night and even my “not-into-veggies” man loved them! There were absolutely no leftovers! Now I know to make more next time!! I served them with baked potatoes and it was delicious!
