Chicken & cheese casserole

Not even sure if this dish can be called casserole but my husband said I must share it because it was that amazing. Not only was it good, it was so good that it got eaten so fast I never got to snap photos of it!!! I guess that’s fine too – sorry folks you don’t get to see its wonderful, cheesy deliciousness. There aren’t even leftovers for a cold, refrigerated picture.

Ingredients:

1 pound chicken breast, cut into 1 inch cubes

10 oz pasta (I did rainbow twirls), cooked

1 bag frozen California style vegetables, cooked (I buy the bags you can steam right in the microwave and used that method)

1 c milk

1/3 c flour

1/4 butter

8 oz cheese cut into 1 inch cubes

Garlic salt, pepper, cumin, paprika, Italian seasoning. all to taste.

Oil

1 tsp minced garlic

Begin by adding some oil to a large skillet, add garlic. When garlic becomes fragrant add chicken, season well and cook until done. Meanwhile, in a separate pot. Melt butter and mix in flour. Then add milk and cheese. Stir and cook until cheese melts and the sauce begins to bubble. When chicken is finished toss in noodles, vegetables and sauce. Stir to combine and serve.
