Meatloaf is the ultimate comfort food and it is a versatile dish! Mike loves this dish so I’ve made it many different ways, but tonight he decided this was the way it will be made from here on out! It had so much added to it to give a unique, but full flavor. I paired it with scalloped potatoes (which can be found in my blog!) and some mixed vegetables. My plate consists of 80% vegetables and 20% between the rest, HA!
1 pound ground beef
1/4 cup shredded cheddar
3 pieces of bread
1/2 bunch parsley
1 – 2 teaspoons of: Italian seasoning, garlic powder, red pepper flakes, pepper, season salt
1 thai pepper (or cayenne)
1/8 cup ketchup, plus more to top
In a food processor (you can order one from me via Pampered Chef, contact info on page) combine bread, mushrooms, onion, parsley and pepper. Add a little water to help moisten the bread, you don’t want it to soak up the juices in the meat then you will have dry meatloaf. Chop until fine. Mix this in a bowl with ground beef, eggs, cheddar, ketchup and seasonings. When everything is mixed well, transfer to baking dish. Squiggle ketchup lines over the top. Bake at 350 degrees for 1 hour and 20 minutes. When done (temp. of 165 degrees) let sit for about 5 minutes before cutting into it.
